Jimmy's Bourbon and Peach Jam

INGREDIENTS
1 CUP FRESH PEACH, SLICED
3 TBSP JIMMY'S BOURBON
1/4 CUP FRESH LEMON JUICE
1 TBSP FRESH THYME
1 TSP ALLSPICE
1 TBSP VANILLA
3/4 CUP MAPLE SYRUP
1/2 CUP SUGAR
1 TBSP GELATIN

PREPARATION
Wash mason jars with hot water and soap, then let dry on a clean towel. Slice peaches and place in a tall pot with maple syrup, gelatin, sugar, lemon juice, allspice, and vanilla.  Stir to combine. Cook over medium-high heat, at a boil, until jam reaches 220° on a thermometer. Once it reaches 220°, remove the pot from heat.

Once pot is removed from heat, stir bourbon and thyme into the hot jam. Pour jam into prepared jars. Let the jam cool to room temperature before putting the lids on. Cool overnight or for several hours until set.

Enjoy with fresh biscuits or toast at breakfast!
