Bourbon Soaked Cherries

INGREDIENTS
1 POUND CHERRIES, PITTED
1/2 CUP WATER
1/2 CUP HONEY
1 TSP VANILLA EXTRACT
PINCH OF NUTMEG
1 CINNAMON STICK
1 STRIP OF ORANGE PEEL
1 CUP BOURBON
1/4 ORANGE JUICE

PREPARATION
Clean two pint-sized mason jars or one large quart-sized mason jar, let dry. Pit cherries and discard the pits and stems. Place cherries in the clean mason jars. Set aside.

In a medium saucepan over medium-high heat, combine the water, honey, vanilla extract, orange juice and nutmeg. Whisk until well combined. Gently stir in the cinnamon stick and orange peel. Keep on medium-high heat and stir occasionally until the mixture begins to simmer. Then, reduce heat to medium-low and continue to simmer for 10 minutes so that the flavors really come together. Remove from heat and strain out the cinnamon stick and orange peel. Slowly add the bourbon and stir to combine.

Pour the mixture over the cherries and let cool completely to room temperature. Seal the lids on the mason jar and give a gentle shake. Refrigerate for at least 3 days before using. Enjoy in your favorite cocktail!
