Jimmy's Bourbon & Bacon Brownies
1/2 CUP PECANS, CHOPPED
1/2 POUND BACON, CHOPPED
10 OZ SEMISWEET CHOCOLATE CHIPS
2 OZ UNSWEETENED CHOCOLATE, CHOPPED
1 STICK, PLUS 2 TBSP BUTTER
1 CUP SUGAR
1/2 CUP LIGHT BROWN SUGAR
3 TBSP JIMMY'S BOURBON
1 TSP SALT
1/3 CUP UNSWEETENED COCOA POWDER
1.5 CUPS ALL PURPOSE FLOUR
Preheat oven to 350 degrees. Grease a 9-inch square baking pan with butter on all sides. Spread the pecans on a baking sheet and toast for about 8 minutes, until fragrant. Let cool. In a skillet, cook the bacon over medium heat, until crisp. Drain on paper towels and let cool. Reserve 3 tbsp of the bacon fat.
In a saucepan, combine both chocolates with the butter and stir over low heat until melted. Scrape the chocolate into a large bowl. Then add both sugars and the reserved 3 tbsp of bacon fat and mix with a handheld or stand mixer. Next, add in the bourbon! After that is well incorporated, add the eggs and salt and mix until smooth. Using a mesh colander, sift the cocoa and our into the bowl with other ingredients and mix until blended.
Pour batter into the prepared pan and sprinkle the chopped bacon and pecans on top. Bake for about 50 minutes until the brownies are set around the edges but still soft in the center. If you use a toothpick to test, it should come out with some batter on it. Transfer to a cooling rack and let cool completely. Cut into rectangles and serve with your favorite Kiepersol wine or a glass of Jimmy’s Bourbon!
