Coconut Rice w/Chicken & Vit
In a sauce pan, combine rice, coconut milk, sugar and salt. Bring
to a boil, while maintaining a stir to prevent rice from sticking.
Cover and cook over low heat until rice is tender and the coconut
milk is absorbed.
CombineRemove sauce pan from heat and let stand for 10 minutes in pan.
Prepare chicken to your pleasure. Transfer rice and chicken to a
bowl, with cucumbers along with scallions.
Salt to taste and enjoy with our slightly sweet Kiepersol Vit!
- 1 CUP JASMINE RICE
- 2 CUPS UNSWEETENED COCONUT MILK
- 1/2 TBSP SUGAR
- SALT TO TASTE
- YOUR FAVORITE PREPARED CHICKEN
- ROTISSERIE, GRILLED, BAKED
- 2 SMALL CUCUMBERS
- DICED CHOPPED SCALLIONS FOR GARNISH
