Grilled Pineapple w/ Coconut Rum Sauce

Prepare
Slice the pineapple and place on skewers. Make sure to soak the
skewers in water about 30 minutes prior to prevent burning
Combine
Prepare the coconut rum sauce by pouring the milk, cream of
coconut, and rum into a small saucepan. Stir to combine. Stir in
the cornstarch and heat over low/medium heat while stirring until
thickened.
Remove sauce from heat and stir in butter until smooth. Let cool.
Grill pineapple for about 2 minutes on each side until softened
and has nice grill marks. Dip ends in coconut rum sauce and then
into your favorite toppings! Enjoy

1 LARGE PINEAPPLE, CUT INTO SPEARS
1/2 CUP COCONUT MILK   (ALT: MACADAMIA NUT MILK)
1 TBSP CREAM OF COCONUT
1/4 CUP PIERRE'S RUM
1.5 TBSP CORNSTARCH
1 TBSP BUTTER
TOPPING OF CHOICE: PICTURED IS SHREDDED COCONUT. CHOCOLATE CHIPS OR NUTS WOULD BE YUMMY TOO.
