Marinated Jacksonville Tomatoes
Cut tomatoes into 1/2-inch thick slices and arrange in a single layer in a large, shallow dish. Measure out the olive oil and remaining ingredients in a bowl and whisk vigorously. Evenly pour over the tomatoes in the dish.
Cover and marinate for at least 2-3 hours on the counter or 12 to 24 in the refrigerator. Bring chilled tomatoes to room temperature before serving.

1/3 CUP EXTRA VIRGIN OLIVE OIL
1/4 CUP BALSAMIC VINEGAR
2 TBSP FINELY CHOPPED RED ONION
1 TBSP MINCED GARLIC
1 TBSP CHOPPED PARSLEY
1 TBSP CHOPPED BASIL
1 TSP SALT
PEPPER TO TASTE
