WINE BUTTERS

INGREDIENTS

4 oz softened butter, unsalted

2 cups wine (we suggest Dulce, Fruition, Steen, or Cabernet depending on your preference)

1 shallot

1 garlic clove

1 tablespoon honey

1 teaspoon salt

1 teaspoon pepper


PREPARE

1.  Saute the garlic and shallot until clear and starting to caramelize.

2. Deglaze with the wine and reduce to approximately 2-3 tablespoons creating a sauce that is thick enough to coat the back of a spoon.

3.  Add the honey and cool.

4.  Once cooled, mix to desired consistency with butter, salt and pepper to taste and adjust flavors as needed.

5.  Scoop, roll, or pipe as desired and enjoy or refrigerate.

6. We love this as an attractive appetizer with simple French bread or zesty crackers.
