Marinated Cheese Appetizer
INGREDIENTS
1/2 cup olive oil
1/2 cup white wine vinegar
3 tbsp chopped parsley
2 tbsp green onions, minced
1 tsp sugar
3/4 tsp dried basil
1/2 tsp salt
1/2 tsp pepper
3 cloves garlic, minced
1 (2 ounce ) jar diced pimentos, drained
1 (8 ounce) block sharp cheddar cheese
1 (8 ounce) package cream cheese, chilled
PREPARE
Combine first 10 ingredients in a jar, cover tightly, and shake vigorously. Cut the block of cheddar cheese in half lengthwise. Cut crosswise into 1/4-inch thick slices and set aside. Do the same with the cream cheese.
CHILL & SERVE
Stand cheese slices on edge in a shallow dish, alternating types of cheese. Pour marinade over the cheese. Cover and marinate in the refrigerator for at least 8 hours. Spoon marinade over top again before serving. Serve with assorted crackers.
